banana bread bake off

ever since the green drink{here}changed my life we have been trying to make healthier choices in the eating department. banana bread is one of my favorites that i figured would never translate so i decided to have a banana bread bake off! the first recipe i got from my step-mom { j}, the extreme banana nut bread... it is yuuummmmmy and delicious and you should bake it for your friends, family and neighbors. right now. the second recipe i got from themusingsofahousewife.com it is yummmmmy and delicious and you should bake it for your friends, family and neighbors. right now.  ill let you be the judge but we really could not tell the difference between the two and actually my sis and bro in law {kj} liked the healthier-gluten free version better!!!{although we couldnt figure out why... such a close call!} since the little one came down with croup this weekend {thanks cadence...} we figured what a better time to stay in and bake a few loaves of bread. here are the two recipes... if you bake them let me know what you think!!! 

{can you tell the difference?}

extreme banana but bread
ingredients:
2 cups all putpous flour
1 teaspoon salt
2 teaspoons baking soda
1 cup butter
2 cups white sugar
2 cups {4-5} ripe bananas
4 eggs, beaten
1 cup chopped walnuts

directions:
preheat oven to 350 degrees f and grease two loaf pans. sift flour, salt and baking soda into a large bowl. in a separate bowl, mix together the butter and sugar until smooth. stir in the bananas, eggs and walnuts until well blended. pour wet mixture into dry mixture, stirring just until blended. divide evenly. bake for 60-70 minutes until a knife inserted into the crown of loaf comes out clean. let loaves cool or at  least 5 minutes, the turn out onto a cooling rack. cool completely. wrap in foil to keep in moisture.

best {ever} gluten free banana bread
ingredients:
4 eggs
4 or 5 ripe bananas, mashed
1 cup sugar
1/2 cup unsweetened applesauce
1 tsp real vanilla extract
1-1/2 cups brown rice flour
1/2 cup sorghum flour
1 tsp baking soda
1/2 tsp salt
1/3 cup melted coconut oil

directions:
preheat oven to 350. in a mixing bowl, beat eggs lightly. add mashed bananas, sugar, applesauce and vanilla. mix thoroughly. meanwhile, melt coconut oil gently on stovetop. add flours, salt and baking soda to wet mixture. mix until all ingredients are moist. fold in melted coconut oil, mixing just until it is blended in. divide evenly. bake for 45 minutes or until bread is no longer we in the middle. insert a knife or touch test to gauge. remove from pans after about 10 minutes, cool on wire racks. wrap in foil to hold in moisture.

ps take that second loaf {because we know you don't need it} and give it to someone you love. wrap it in foil, then in a cute dish towel and don't forget to jot down the recipe. check out my fabric wrapping tutorial here.
